Breakfast for Dinner! Cheesy Egg and Spinach Cupcakes!

My kids were begging for breakfast last night for dinner - so I made the easiest recipe in the world- and they loved it!

Scrambled eggs are just so much more appealing to kids when they look like cupcakes!

Ingredients:

*Eggs

* Cheese

*Spinach (Or any other mix- ins you like or have on hand.)

Mushrooms, Sausage or Peppers work well too!

1. Beat the eggs in a small bowl

2. Add in your mix ins and pour into well greased muffin tins- tops with lots of cheese!

3. Bake at 375 degrees for 15 minutes (or until the eggs have risen and are fluffy and cooked through- check with toothpicks) Gently remove from the muffin tins.

(Obviously I was in a rush and ripped a few spots in mine trying to get them on the table for my impatient kids!)

The best part? No utensils! At least for my kids- they eat them like muffins and gobble them up!

Cheap, quick and easy and you can sneak in a ton of veggies. After all- what kid can resist cupcakes for dinner!?

I am moving again .

NO- not to another house - give me a break- I cant move again!

My blog will be moving to Wordpress in the next few days! My designer (WackiJacqui Designs- who has been more than patient with me because I an completely clueless about anything related to design or how the whole process works!) will be moving me soon.

I am hoping for a new fresh, less cluttered design and all the millions of benefits I have been told that come with Wordpress! Wish me luck!

Spaghetti Hot Dogs! {Kid Friendly Recipe}

This "recipe" (if you can call it that!) my kids call "Party Dogs!"

It is the simplest dish ever created- and yet they love it because they get to help make it!

It takes 2 ingredients, 5 minutes and it is guaranteed they will eat every bite!

Party Dogs Recipe:

Ingredients:

* Spaghetti Noodles

* Hot Dogs

Recipe:

*Cut you hot dogs into bite size pieces

*Take your spaghetti and insert them gently through the hot dogs (As many as you would like in each)

This is were the Play part comes in!

This is what they will look like when you are done

Then - throw them in a pot of boiling water until pasta is cooked to thoroughly

And Voila! Happy Kids!

End of Brody's First Quarter of Pre K

Today was the last day of Brody's first quarter of Pre-K!

We had a deal from day one that if he got a sticker for good behavior every day for the quarter- he could pick any "prize" he wanted as a reward.

Of course- his first choice was "A Trip to Maui"- but I talked him into a trip to Target to pick out whatever he wanted.

He picked a Hot Wheels Scooter and a workbook.

Congrats little man on a great quarter! Mommy and Daddy are so proud of you!

This is What the Aubut Girls Do on Rainy Days...

As many of you have seen- my daughter has the tightest curls ever. Which means a lot of frizz when it is humid out.

(And it pretty much looks like a huge lions mane when she plays with it!)

So today we decided it was time for another Olive Oil treatment for both of us.

This really makes her hair manageable and super soft.

Since a lot of people have asked how I keep her crazy curls under control (sometimes!) I thought I would do a mini post on it!

First- Wet hair with warm water

Heat up oil in microwave just so it is warm. Then massage into scalp and evenly through hair. (If your scalp gets oily- start a couple inches from your scalp)

We both have dry hair so we massage it into our heads really good.

Now for the super cute part. You can use a shower cap- but since we did not have any- I used Saran Wrap to cover our hair. Then leave it on for at least 30 minutes to let the oil soak in.

Lastly- rinse it out and shampoo and condition as usual. (It takes me 2 times of shampooing to get it all out of my long hair)

This is the only time ever I can comb through her hair without de-tangler or leave in conditioner.

Let air dry and viola!

Super soft, shiny, frizz free hair!

(For a couple weeks at least!)

Change Can Be Good

We are officially moved into our new house.

The first day I was so stressed and second guessing myself when I had to try to fit all of our stuff into a new space. The houses are about the same square footage, but the space layout is much different.

Our old house was just large. 12 foot ceilings, a great room floor plan that was ginormous. Large rooms and all on one level.

The new house has more rooms, but they are smaller. We gained a basement and another bedroom though.

Moving my stuff into the closet today made me realize- I am REALLY going to miss my old closet!

My new closet is a little smaller than this one- but only has two bars for all of our stuff. It fits- but does not look nearly as organized anymore without all the shelving!

On the plus side- I now have a dedicated workout room with a TV - and a huge basement where the kids rooms are and we are using the whole space as a playroom- so upstairs stays clean all day!

(Part of the basement- not yet decorated! )

Now that we are all settled- I am really loving the house!

I LOVE having a basement for the kids. I LOVE the basketball court and pool.

{I do still miss my closet though} ;)

Million Dollar Mac and Cheese {Recipe}

So I am sure there is a more sophisticated name for this dish, but I have nicknamed it "Million Dollar Mac and Cheese" because of the expensive cheese it takes! :) Gruyere, Feta and Goat Cheese.

But I promise- it is so worth it!

Ingredients:
1 lb. pasta shapes (I use Cellentani anytime I can- it's just fun!)
1.5 lb. raw shrimp
4 oz. feta cheese
3 oz Goat Cheese
Zest of 1 lemon, divided ( I have used lemon juice in a pinch)
2/3 cup Panko breadcrumbs
2 tbsp. fresh parsley, chopped, divided
5 tbsp. butter, divided
4 tbsp. all-purpose flour
3 cups milk
2 tbsp. fresh dill, chopped
10 oz. Gruyere cheese, shredded- I use a LOT- almost 3 cups
½ tsp. kosher salt
1 tsp. ground black pepper

I adapted the recipe from Annie's Eats

Boil a large pot of salted water and cook pasta according to package directions depending what kids you choose to use. Drain and set aside. Add the raw shrimp to the warm pasta and blend together. The hot pasta will cook the shrimp a little.

Preheat the oven to 400˚ F. In a small bowl, combine a handful of the feta, a pinch of the lemon zest, the panko crumbs, 2 teaspoons of the parsley and and 1 Tbs of melted butter. combine all together and set aside.

In a saucepan, melt the remaining 4 tablespoons of butter over medium-high heat. Once melted, stir in the flour and whisk together until it forms a paste. Cook until a light golden brown. Stir in the milk and continue stirring until it thickens and starts to bubble (about 6 minutes). As soon as the sauce has thickened, remove from the heat and stir in the remaining feta, goat cheese, Gruyere, remaining parsley, remaining lemon zest, dill, salt and pepper. Pour the mixture over the pasta and shrimp; toss well to coat.

Transfer the mixture to a lightly greased 3-quart baking dish. Sprinkle the breadcrumb-feta mixture evenly over the top. Bake for 20-25 minutes, until lightly browned and bubbling.

This is a very decadent and delicious dish and can be adapted so many ways!

Hubby wants me to try crab instead of shrimp next time- what do you think?

How Young Is Too Young? {Guest Post}

My kids are still just a bit too young to have a cell phone, but it seems that people are starting them younger and younger these days. While at the local grocery store, I watched a little girl, who couldn't have been over the age of 8, pull a cell phone out of her purse and proceed to call a friend. While mom shopped, she chatted away.

I couldn't believe it. I'm all for kids, especially those of driving age, having cell phones. But how young is too young? Do I need to send my oldest to Kindergarten next year with a new backpack and smartphone just to fit in?

That little girl didn't really need a cell phone. Aside from school, she probably rarely left her mother's sight, and surely, she didn't understand the value of that cell phone. Cell phones are expensive, and most children don't understand that every call, text, and bit of data used produces a cost.

So that got me thinking, what will I do when my kids are ready for a cell phone? Will I equip them with the latest smart phone and data plan, and simply bite the bullet when it comes to my monthly cell phone bill? Or, will I make them wait?

After further research, I think I've decided on getting each of my kids a prepaid phone when it is time – which will definitely be after grade school. With a prepaid phone they still get the service they need to be safe and to keep me updated on their whereabouts, and I don't have to worry about any ridiculously high bills. They also get to learn a lesson in responsibility. The kids will learn how to effectively manage their time and their data.

When they use it all up, they will just have to wait.

I still can't get the image of that little girl out of my head though. It's just so weird to think that 10 years ago, a flip phone was cool and not very many people actually carried around a cell phone. Nowadays, it seems as though we can't detach ourselves from them – so much so that even our toddlers are carrying them around.

Must Read Book! Max Lucado

This book is a must read!

I love the writing style of Max Lucado- he presents some cold hard facts about the state of the world, and then asks you, the reader- "What are you going to do yourself to make a difference?"

Max gives examples of how you can make a difference in the world and even smaller steps you can do to make difference to one person. Using the Bible, he explains how the little gestures you do each day can have a greater impact on society.

My Hero and My New Hobby.....

I spent this weekend at a Women of Faith Conference in downtown Phoenix. It was incredible and inspiring and I am recharged now!

The highlight of the conference for me was seeing Brenda Warner. I bought and read her new book One Call Away in 2 days while at the event-
I just could not put it down.

She has an amazing story and I want to be like her when I grow up! LOL!

We are still moving slowly to the new house. Andre surprised me by painting both the kids rooms while I was away- so that took a huge load off me for this week. The movers come on Wed- and I am so excited to be done with all this!

I also found a new love this week.

Spray Paint.

No joke- I bought some spray paint to refinish an antique jewelry stand my aunt gave me a while back. And while I have not started that project yet- I have spray painted all the baskets in my bathroom, the pantry, and tomorrow will be doing the kids Pottery Barn craft Table, and some misc. old Pottery Barn wooden chairs that I will be putting around the new pool!

I have found myself walking around the house looking for "projects" to spray paint! LOL!

I have a ton of before and after pics coming in the next week after we get settled in!

Mini Vacation Just For Me!

I am so excited.

I will be going on a mini vacation - ALL ALONE!

Until Sunday- I will be heading downtown to attend the Women of Faith Conference. It is only about an hour from my house- but I am getting a hotel and taking this weekend for myself to relax, recharge and be inspired.

Date Night With Daddy

Ayla has been so excited for tonight.

At her school- they are putting on a "Daddy Date Night" and all the kids get to take their Daddies to school tonight to perform and show them what they have been working on.

(And shhhhh- but I happened to read the flyer and saw that they will be making a special Mothers Day present together!)

Ayla wanted to look special for her Date, so we put on some jewelry, and I even let her put on a tiny bit of glitter on her eyes.

I think Daddy was a little excited too.

Funny Sh!* My Daughter Says.....

Ahhh... my little angelic looking 3 year old.

I think she may have picked up a tad of my sarcasm.

These are just a few of her little soundbites from this weekend.

Me: "Ayla- can you bring me that mop over into the kitchen? "

Ayla: "Yes, Your Majesty"

Ayla: "Those cheerleaders are so pretty!"

Me: "Prettier than me?"

Ayla: "Um- YEAHHH Mom, much prettier"

Me: "Awesome"

Ayla: (Crying for Andre to come rescue her from having to go to bed)

Me: "Go to BED!"

Ayla: (more whining) After another 10 minutes of whining:

"This is getting REALLY Boring for me!"

Me: Brody- I love you!"

Brody: "Mom I love you 100 billion times more"

Ayla: "Mom, I love you only about 39.99 times more"

And the kicker today.

I spent the day cleaning out our new house. I let Ayla spray an air freshener into the hallway. It was a nasty scent and I told her:

Me: "Ayla- dont spray that anymore- it smells like an old lady in here."

Ayla: "Brody- Mom says I cant spray this anymore because it smells like a lady!"

Me: "No baby- I said it smells like an OLD Lady."

Ayla: "OH!" (long Pause)"Brody! Don't spray this anymore- it smells like MOM!"

Awesome.

I am too young for this abuse.

Moving Sucks

In the 11 years Andre and I have been together, we have moved 6 times.

#7 is supposed to be happening right now- but I have not made much progress.

(As in I have not packed a SINGLE box)

I used to love moving. I actually liked packing and unpacking, setting up the house, everything new!

Move #7-

I don't love moving anymore

Downsizing sucks!

Packing sucks!

having to buy all new furniture sucks!

(OK I lied about that last part!)

Buying new furniture has been the best part so far!

Our current house has a great room floor plan, so we only have 1 couch, but the new house has a formal living, family room AND basement. So today was fun going and ordering new couches and rugs.

(Hubby never flinches about me spending money- but I think I even shocked him today. Oops!)

I will have to cook a dinner or something else housewifey to make up for it!

in the meantime, I insisted that I would get the new house ready- no house cleaners necessary. So- have spent the last 2 days at the new house Scrubbing baseboards, doors, shelves, walls, windows, etc. And I am still not finished with the main level yet! I still have the entire basement with 4 rooms and 2 closets- ugh!!

OH- and painting- don't forget that! I just HAD to promise the kids that they could duplicate their current rooms.

WHY did I EVER enjoy moving???

Oh right- that was before kids.

About 2 more full days and I will be ready to turn the house over to the painters and start packing our current house.

Did I mention that we were supposed to be moved in on the 15th??

My head is going to explode ...

Outside riding the scooters in the backyard yesterday and Ayla decided it would be fun to ride hers down the Brick Paver stairs going down to the grass area.

She made it down stair #1 before she pitched forward and face planted on step #3.

Bloody nose, scraped nose and lip.

She screamed for about a minute and then was over it- but she has been milking it hardcore today!

"mom- I cant take a nap, it hurts my nose" "mom, I need ice cream for my nose" etc...

It actually looks worse today now that it is all scabbing.

Poor Daredevil baby!

5 Things Your Kids Should Know About Money

Before Entering the Real World

There has been an ongoing concern among parents of school-aged offspring of a serious lack of personal financial education in elementary schools, high schools, and even colleges and universities. Since a large majority of college graduates leave school with a diploma in one hand and a serious debt load in the other, it makes it all the more important for kids to gain at least a working knowledge of banking, credit cards, and money management skills before entering the real world. In this day and age, that education most likely must come from parents concerned for their child’s adult financial security.

Here are 5 things every kid should now about money before leaving college:

1. ATMs Require Deposits
Consider this fact: For most of your child’s life they have likely seen you head to a machine at the bank, punch in a few numbers, and have a handful of cash pop out. Even teenagers may have difficulty relating the facts together when it comes to banking. In order to have money come out of the machine, money must be deposited into the bank. Basic banking skills are a cornerstone of a personal financial life. In order to pay the bills, one must have enough cash in the bank. Teach your child the basic skills of checkbook management, savings goal creation, and budgeting if you expect them to put their income to good use and keep debts at bay. Accurate banking skills will also keep credit scores from taking a dip.

2. Credit Is Not Free
While the government has taken some action to prevent young adults from drowning in credit card debt, society still is not teaching kids enough about how credit works. Students under the age of 21 may not be able to secure a credit card of their own accord but it doesn’t mean they should not learn how credit cards work. To many young adults, a plastic credit card equals free money. Kids need to be taught that credit card use is actually more costly than cash purchases. Parents need to break down a credit card statement for their child, underscoring how credit actually works, what interest will cost, and the consequences of not paying credit card balances on time. Otherwise, teens and young adults will likely rack up plenty of credit card debt they do not have the income to pay off if credit cards continue to be treated like an additional source of income.

3. Student Loans Should Be a Priority
College students who needed the financial assistance of a student loan to make tuition affordable need to understand how their student loan will affect their finances for years to come. Many students who undertake their own loans fail to clearly understand the terms and conditions of such a loan. As a result, they think nothing of missing a few payments in order to make rent now and then. Parents need to educate their children on the importance of on time payments each and every month. They should also reinforce the importance of eliminating the debt as fast as possible to cut down on the amount of interest that has to be paid over the course of the loan. Additionally, recent grads need to understand how missed payments hurt their credit score and as a result can hurt their chances of getting the jobs they apply for after graduation.

4. Credit Scores Mean Something
Few students may even realize they have a credit track record. Those that do may not understand how much a poor credit history and low credit score can affect their present and future. Young adults should be shown a copy of their credit report and parents can explain the different parts of the report and what they mean. It should also be made clear that low scores caused by missed payments or overextension of credit can mean higher car insurance premiums, increased risk of financing disapproval, and the potential to lose employment opportunities. Credit scores and history reports are going to be a part of a child’s life forever so an early education can go a long way to preserving good credit.

5. Learn Now to Live Below Your Means
Whether your child graduates from college into a high paying job or a barely paying internship does not matter. What does count is how your child is able to manage the money they are earn in relation to their expenses. Budgeting is definitely a concept every consumer, young and old, needs to understand and learn to live with. A child of any age can be taught to save more than is spent, especially on items outside of basic food, shelter, and clothing. Living below one’s means requires that much consideration is put into spending any amount of money with an emphasis on savings. Children who are able to learn this concept as a young child still need to have it reinforced when as an adult they are able to make their own financial decisions.

What Parents Can Learn
Aside from being able to provide your child with an all-around quality education, parents must first realize that it is not just their lessons that will help a child on the right road to good financial management – it is their own actions. A parent who has demonstrated their ability to understand and do the things they are teaching their kids about money stands a much better chance that their children will follow their lead and put effort into proper money management, better savings goals, and a propensity for organized and consistent financial an credit management.

Hubby Is Out Of Town... So What Do I Do??

SHOP!!!

We are moving into a new house on the 15th- and I am in major decorating mode!

I ordered this today from Urban Outfitters for my Master Bedroom.

We are painting the walls a dark grey, and will have pink accents. I am so in love with the ruffles and the clean white color!

My kids are no longer allowed in my room EVER! ;)

Once I found these rooms- I had my inspiration!

This is actually the house of the founder of Philosophy here in AZ. I want this house!

(But I will settle for a modified version of the bedroom for now)

I am so excited for my ultra glam-girly room.

I never thought that Andre would go for it- but we happened to be out shopping at Restoration Hardware, and I showed him this mirror that i was drooling over- which led me to show him all the bling chandeliers, and then suggesting how great it would look with grey walls and an all white bed- and he liked the idea!!

Whoo Hoo- I am running with it before he changes his mind!

Ok- I am not giving him enough credit- he rarely tells me no. His mantra is "Happy wife, Happy Life"

LOL!

That is what the people at Kraft Foods/Crystal Light are asking.

I will admit - I am a hardcore Diet Coke drinker.

I don't do coffee in the mornings- I go straight for the Diet Coke. I gave it up completely when I was pregnant and then proceeded to reward myself with gallons of it after the kids were born and it brought the addiction flooding back! I know it is bad for you, and I can just imagine what it is doing to my stomach. (I have major stomach issues all the time- and I know the soda is not helping!) but I cant help but love that burn! LOL!

I tried Crystal Light when I was pregnant, and loved it. Car Options For The Big Family

Before purchasing a new (or used) car it's a good idea to make a list of your top preferences and compare them. Look up your favorite makes and models on sites like netcars.com to view cars available near your area. With a big family, it's vital that you know exactly what options you need to accommodate your family comfortably.

One of the most affordable options is the Kia Sorento. This vehicle comes with the option of having third row seating so your family can fit with room to spare. It also has a 'car-like' feel while driving and is good on gas mileage. If you are looking for a new or used car for your large family but want to forego the traditional minivan, this little SUV is a good choice.

For minivans, you can do no wrong with a Dodge Caravan. This family car was built for safety and has front, rear and third row airbags so your entire family is covered in an accident. It also has traction and stability control and the newer models feature improved engines. The latest caravan model can seat up to eight passengers, which is more than enough for most big families.

The Kia Sedona is another minivan option. The 2011 Sedona models come standard with perks like an mp3 player, bluetooth capabilities and stability and traction control. It was designed with convenience and safety in mind.

Other minivan options include the Honda Odyssey and the Toyota Sienna. Big families need functional vehicles that are affordable and safe. The Toyota Sienna comes standard with removable captain's chairs, footrests, lounge-like seating and iconic spoiler. The Honda Odyssey is a little more costly but features the latest in technological innovation. Despite its size, the Odyssey can park in tight spaces. It also has a whopping 15 cup holders.

For those that prefer the look of smaller SUVs, the Mitsubishi Outlander and Toyota RAV4 are perfect family cars. The Outlander has third row seating that is perfect for small children and the RAV4 is a crossover that maintains that car-like feel.

If you want a mammoth of a family car take a look at the Chrysler Town & Country. Consistently ranked as one of the best and most trusted family cars, the Town & Country has front row bucket seats and the second and third rows are completely stow-and-go. All it takes is the press of a button to stow the third row and there is even a foldable roof rack for cargo.

Consider the needs of your family when browsing new or used cars. The vehicle you like may have adequate seating, but will it also accommodate strollers, luggage, several backpacks, car seats and other odds and ends? Can you see the whole family piled in at once on top of a bunch of groceries? What about when the whole clan goes on vacation? Is it possible a relative or two may tag along? Keep all these things in mind when shopping for a big family car and don't forget the test drive.

I was lucky enough to try their Bamboo Bath Towel Set. I had never used Bamboo fabric before and was not sure what to expect, but I am happy to report that these are hands down the softest and most decadent towels I have ever been wrapped in! They are also super absorbent.
